Following a welcome (though completely unexpected) warm spell in Glasgow this week, we are feeling super summery at Hectares HQ! In order to celebrate this warm weather with an appropriate selection of snacks, we enlisted the wisdom of healthy food gurus Dower & Hollingsworth to create a recipe that both quenches our thirst and keep us cool this summer. Here is the delicious treat they rustled up:
Coconut Berry Ice Lollies

- 1 carton (330ml) coconut water
- 1/2 cup small strawberries
- 1/2 cup blueberries
Simply slice the strawberries fairly thinly and place a couple of slices as well as a couple of blueberries in each mould. Then pour the coconut water in and place carefully in the freezer for a couple of hours to set. Enjoy in the sunshine!
